A Lucky & Quick Irish Soda Bread Recipe!

St. Patrick’s Day is upon us, and what better way to embrace the luck of the Irish than with a warm, freshly-baked loaf of Irish soda bread? Today, I’m sharing this simple recipe that will bring the aroma of Ireland into your kitchen, all with the ease of your trusty bread machine!

This Irish soda bread is the perfect companion to your corned beef and cabbage, creating a symphony of flavors that celebrate the spirit of St. Patrick’s Day. The best part? It’s ready in just over an hour, giving you plenty of time to enjoy the festivities.


Here is the bread machine I am using - I just love this pale mint green color - especially on St. Pat's day, but it's pretty (and functional) all year round!




✨️🍀1 hour Bread Machine Irish Soda Bread🍀✨️

Ingredients

1/2 cup warm water

1 cup + 2 T buttermilk

2 eggs lightly beaten

2 T butter

2 T molasses

1 cup whole wheat flour

3 cups cake or bread flour

1/2 tsp baking soda

1 1/2 tsp salt

2 tsp of Fleischmann's RapidRise Highly Active Yeast

2 tsp caraway seeds

1 cup currants (or you can sub raisins or craisins!)


Instructions:

Place all ingredients in the bread machine, ensuring that the liquid ingredients are at the bottom and the dry ingredients are on the top

Set bread machine to Quick Bread cycle

I set the weight to 1lb and chose the dark color setting - all together it took about an hour and 25 minutes from start to finish!

Allow bread to set for 10 minutes before removing it from the bread machine

Serve warm with Irish butter and jam!😋
